Сморчки, относятся к ряду грибов, которые не так хорошо известны, как широко распространенные маслята, опята, боровики или подберезовики. Правда многие не знают, где растут сморчки и когда собирать их нужно, как приготовить сморчки вкусно, быстро и просто.
Но это досадное упущение, ведь сморчок — это не просто гриб с забавным названием. Оказывается, сморчок является близким родственником всем известного гриба трюфеля, который пользуется заслуженной славой благодаря тонкому вкусу и аромату и применяется в качестве эксклюзивного ингредиента в блюдах высокой кухни.
Все дело в том, что трюфели и сморчки относятся к одному семейству, вероятно этим и обусловлен ряд сходных качеств, которыми обладают эти ценные грибы. Плодовое тело сморчка в сыром виде не обладает таким ярко выраженным ароматом, каким обладает трюфель, но зато в приготовленном виде, его вкус невероятно тонок и отдает ореховыми нотками, подобно трюфелю, а мякоть гриба обладает нежнейшим вкусом.
Поэтому, если вам встретится в лесу этот удивительный гриб, ни в коем случае не проходите мимо, обязательно соберите его и приготовьте по одному из предложенных нами ниже рецептов.
Сморчок относится к ряду условно-съедобных грибов, но это не значит, что надо его бояться и пренебрежительно обходить стороной, следует просто правильно приготовить этот гриб. После варки он абсолютно безопасен и даже обладает рядом целебных свойств. Но обо всем по порядку.
Где растут сморчки
Чаще всего сморчки можно найти на опушках лесов, вдоль лесных дорог и тропинок, в смешанных или хвойных лесах, иногда они встречаются на лугах и пастбищах, где проводится выпас животных. Этот гриб любит почву богатую перегноем.
Как и все другие грибы, он любит высокую влажность, поэтому часто прячется в траве либо невысоком кустарнике, иногда его можно найти в низинах и оврагах. Почвы по составу предпочитает песчаные и известняковые, часто его можно встретить на местах лесных пожарищ.
Такие участки земли гриб заселяет очень охотно, поэтому если вам известны места, где в прошлом году бушевали пожары, велика вероятность найти там сморчок.
Это объясняется тем, что зола от пожара изменяет реакцию лесной почвы в сторону более щелочной, а именно в такой среде наиболее легко расселяется гриб.
Разумеется, рядовой грибник не всегда знает, какая почва находится там, куда он выбрался на грибную охоту. Такому грибнику в качестве подсказок послужат лесные и полевые растения, предпочитающие щелочные почвы.
На почвах щелочной реакции растут зверобой, кипрей, горчица полевая, люцерна, мак, тимофеевка луговая, вьюнок, мятлик луговой, полевица. Если эти растения встретились на вашем пути, то с большой степенью вероятности вам удастся найти и сморчок.
Когда собирать сморчки
Сморчки — ранние грибы, они подобны весенним цветам-первоцветам, открывающим солнцу свои нежные цветы сразу, как только сошел снег.
Первые сморчки можно искать в лесу уже в начале апреля, а иногда, если весна ранняя — то даже в конце марта. Но массовый выход сморчков на поверхность происходит все-таки в конце апреля — мае.
Майские грибы по сравнению с апрельскими отличаются лучшим качеством, они более плотные и менее водянистые, а значит — имеют более насыщенный вкус. Собирать стоит грибы на крепкой ножке и с плотной шляпкой, не имеющие признаков старости и переспелости.
Как и другие грибы, сморчки любят влажность, поэтому появляются после того, как пройдут обильные осадки, либо произойдет массовое таянье снега. Иногда сморчки после обильных дождей можно встретить еще и в июне, а в отдельные сезоны наблюдается и осенний выход сморчка.
Но для тех грибников, которые хотят наверняка собрать урожай этого гриба, стоит поторопиться с тем, чтобы не упустить основной майский сезон.
Сморчок и его двойники
Как и большинство съедобных грибов, сморчок имеет своего двойника, это гриб Веселка, или ложный сморчек. У большинства грибов ложный аналог зачастую является ядовитым.
Что же касается Веселки, то его французы едят и даже употребляют в сыром виде, что для нас может показаться несколько странным, учитывая, что обычный сморчок, родственный Веселке, употребляется исключительно в приготовленном виде.
Как бы то ни было, знать отличия этих грибов необходимо. А уж как готовить и употреблять ли в пищу ложный сморчок, каждый грибник решит сам.
Тело гриба сморчка обыкновенного состоит из сморщенной шляпки округлой, овальной или конической формы, располагающейся на длинной белой ножке.
Шляпка представляет собой испещренное вертикальными бороздами с углублениями и поперечными перемычками плодовое тело бежевато-желтого, коричневого либо бурого цвета.
При этом шляпка имеет глянцевую поверхность, а выступы на шляпке имеют более темную окраску, чем впадины. Внутри такой гриб обязательно полый, а ножка занимает до трех четвертей высоты гриба, углубляясь в шляпку.
Веселка же имеет свои отличительные особенности, интересен и необычен характер его роста. Гриб веселка появляется на свет сначала в виде небольших белых бугорков. Затем такой бугорок раскрывается из него в течение нескольких десятков минут вырастает гриб до 30 см высотой.
Гриб растет настолько быстро, что за его ростом буквально можно наблюдать в реальном времени! Разумеется, если вам удастся застать этот удивительный момент. По внешнему виду выросший гриб отличается от сморчка цветом и формой шляпки. Она обычно имеет форму эллипса, белого, либо оливкового цвета.
Основание ножки гриба имеет шарообразное утолщение, которого не наблюдается у сморчка. Ну и самое главное отличие — веселка издает весьма неприятный запах, предназначенный для того, чтобы привлекать к нему мух и других насекомых. А сморчек пахнет всегда приятно.
К двойникам сморчка можно отнести еще и гриб под названием строчок. Его шляпка имеет бесформенную структуру, окрашена в коричневый цвет, и растет гриб прямо из земли, а не на ножке, как сморчок или веселка. Строчок также пригоден в пищу только после тепловой обработки.
Как приготовить сморчки, рецепты приготовления
Перед кулинарной обработкой сморчок необходимо тщательно промыть водой. В углублениях шляпки зачастую собирается пыль, мелкий мусор, а также могут находиться семена гриба, которые лучше не употреблять в пищу.
Перед употреблением гриб необходимо разрезать пополам. В полом теле гриба могут прятаться насекомые, их необходимо удалить. А нижнюю часть ножки гриба, которая часто засорена землей, надо обрезать.
Еще раз напомним, что сморчок относится к условно съедобным грибам, это значит, что есть их можно только после соблюдения определенных условий.
Для сморчка этим условием является обязательное отваривание грибов в трехкратном объеме воды не менее 15 минут, а некоторые грибники рекомендуют увеличивать время варки до одного часа.
После этого воду необходимо слить, а грибы промыть и доводить до готовности по собственному вкусу.
Строгое условие, предусматривающее варку, объясняется тем, что сморчки содержат такие вещества, как метилгидразин и гирометрин, они являются опасными для человеческого организма и могут вызвать отравление. Поэтому не пренебрегайте предварительной обработкой, а после этого используйте грибы в пищу.
Кстати, есть и еще одно небольшое предостережение. Сморчки и строчки имеют пористую структуру, из-за этого их не рекомендуется готовиться в микроволновке, там они могут взрываться подобно поп-корну.
В остальном — сморчки предоставляют кулинару широкое поле для деятельности. Их можно варить, жарить, запекать, тушить, фаршировать, а также подвергать сушке и использовать впоследствии для приготовления ароматных супов.
Сморчки фаршированные
Поскольку данный гриб имеет полую структуру, его очень удобно подвергать фаршировке. Грех — не использовать это его прекрасное свойство, тем более, что блюдо в итоге получается просто отменное.
Для рецепта понадобится:
- сморчки 500 г,
- мясной фарш 250 г,
- сметана 150 г,
- соль,
- черный молотый перец,
- свежая зелень.
Приготовление:
- Промыть грибы, разрезать поперек, отделив шляпки от ножек, отварить в большом объеме воды не менее 15 минут.
- Ополоснуть грибы водой. Ножки грибов измельчить и смешать с мясным фаршем.
- Мясной фарш приправить солью и перцем по вкусу.
- Нафаршировать шляпки грибов приготовленной смесью, выложить на жаропрочное блюдо, залить сметаной и запечь в духовке в течение 30-40 минут.
- Подавать блюдо горячим, посыпав мелко нарезанной зеленью петрушки.
Котлеты из сморчков
Такое необычное блюдо способно удивить даже самого опытного гурмана. Его нежную консистенцию многие наверняка спутают с текстурой нежной свинины, но ореховый привкус вызовет неизбежную интригу и побудит множество заинтересованных вопросов к хозяйке, приготовившей сей шедевр.
Для рецепта необходимо взять:
- сморчки 1 кг,
- хлеб или сухари 300 г,
- молоко для замачивания сухарей,
- яйцо 1 шт,
- соль,
- черный молотый перец,
- лук репчатый — 1 шт,
- растительное масло для обжарки,
- панировочные сухари.
Приготовление:
- Грибы промыть, отварить в воде не менее 15 минут, воду слить, а грибы промыть.
- Лук нарезать кубиками, обжарить на сковороде до золотистого цвета.
- Хлебные сухарики замочить в молоке, затем отжать.
- Измельчить отваренные грибы, соединить их с обжаренным луком, отжатым хлебом, специями и яйцом.
- Фарш хорошо вымешать до однородности.
- Набирать фарш ложкой, класть на тарелку, в которую насыпаны панировочные сухари, обваливать со всех сторон и выкладывать на сковороду с разогретым растительным маслом.
- Обжаривать котлеты до золотистого цвета, подавать к столу горячими.
Полезные свойства и противопоказания
Грибы обладают массой полезных свойств и содержат вещества, не присущие ни одному другому пищевому продукту. Сморчки в этом плане не исключение.
В них найдены вещества, благотворно влияющие на зрение, экстракты из стручка на спиртовой основе приготавливали еще несколько веков назад и рекомендовали в качестве средства, укрепляющего глазные мышцы, лечащего близорукость и дальнозоркость, предотвращающего катаракту и помутнение кристаллика.
Сморчок обладает антиоксидантными и противовоспалительными свойствами. Хорошо влияет на деятельность желудочно-кишечного тракта, лечит суставы, оказывает тонизирующее и общеоздоравливающее действие.
