Если вы искусство выпечки только начинаете осваивать, ажурные блины на воде станут настоящим тренингом. Рецепт легкий. Компоненты:
- Кипяток — 0,5 л;
- Масло растительное -60 мл;
- Сахар — пара столовых ложек;
- Яйца – три шт.;
- Мука – 375 г;
- Соль;
- Сода.
Готовим:
- Яйца заливаем в миску, засыпаем туда же соль с сахаром. Минут пять взбиваем так, чтобы получилась крепкая пена;
- Влив стакан кипятка, продолжаем взбивание;
- Медленно помещаем муку в эту смесь, продолжаем работать миксером;
- Соду смешиваем со вторым стаканом кипятка, добавляем к тесту. Перемешиваем;
- Пришла очередь растительного масла. Добавив его, взбиваем повторно, даем тесту треть часа настояться;
- Можете печь такие блины на сухой сковороде: масло уже есть. Теста наливаем совсем мало;
- Не стоит смазывать после приготовления. Сложите стопочкой, накройте крышкой: они останутся мягкие и пропарятся.
- Начиняйте по своему настроению, хороши блины на воде с творогом, мясом, сыром…
Дрожжевая версия блинов на воде (вариант посложнее)
До того, как приготовить блины без молока по следующему рецепту, позаботьтесь о наличии ингредиентов:
- Пара стаканов воды;
- Пол чайной ложки сухих дрожжей;
- Сахара (15-20г);
- Уксус;
- Соль;
- 5 ст. л. пшеничной муки;
- Ложка масла растительного масла;
- Яйцо;
- Ванилин (любого вида).
Готовим:
- Разводим в теплой водичке дрожжи, засыпаем соль с сахаром. Без соды не обойтись: её гасим соком лимона (уксусом). Вливаем к воде;
- Муку с ванилином засыпаем, яйцо вбиваем. Должно получиться привычное блинное тесто. Оставляем на 90 минут;
- Наступает очередь масла. Им же смазываем сковороду и выпекаем.
Быстрая версия блинов на воде (почти молния)
Быстрые блины на воде решат проблему с интересным вкусным завтраком. Не стыдно их даже гостям подать. Для приготовления нужны:
- 0,5 кг муки;
- Пара-тройка стаканов кипятка;
- Три-четыре яйца;
- Сахара (20г);
- По половине чайной ложки соли, уксуса, соды.
Готовим:
- Яйца в миске взбиваем (чем есть: венчик, блендер, миксер…);
- Добавляем к ним весь кипяток, размешиваем. За ним сахар и соль;
- Просеиваем, смешиваем с содой муку;
- Сыпем в яичную смесь, взбиваем, чтобы не осталось комочков;
- В теплой водичке (120 мл) разводим лимонную кислоту, переливаем в тесто. Оно должно по густоте напоминать жидкую сметану;
- Печем сразу же. Первый раз мажьте посуду, дальше не нужно. Огонь делаем средний, печем обе стороны по паре минут. Начинка по вашему вкусу.
Австралийская версия блинов, сладко, но на воде
Вкусные блинчики на воде готовят не только у нас, но и в Австралии. Нужны:
- Сливочный сыр – 0,5 кг;
- Смородина – половина стакана;
- Стакан кипятка;
- Абрикосовый джем- половина стакана;
- Два яйца;
- Сахар — четверть стакана;
- Ваниль и лимонная цедра – по чайной ложке.
Крем:
- Стакан молока;
- 3 ст.л. сахара;
- 2 яйца.
Печем:
- Ягоды запариваем кипяточком на четверть часа. Сыр,ваниль,желтки, цедру, джем смешиваем в блендере. Белки взбиваем отдельно с сахаром. Пена должна получиться крепкая.Сюда мы вводим сырную смесь.
- Духовку разогреваем (200 градусов).Выкладываем в форму овальные блинчики, скатываем их в рулончики и складываем в форме для выпечки. Выпекаем.
- Готовим крем из молока, сахара и яиц. Поливаем им готовые блинчики. Подаем теплыми и с сахарной пудрой. К ним уместен будет сладкий соус: подойдет ванильный, абрикосовый, шоколадный, сгущенка…
Экстремальный вариант для постящихся
Если до праздников далеко, до окончания поста- еще дальше, попробуйте сделать…постные блины на воде. Да, они получатся! Нужны:
- Вода кипяченая холодная – 0,5 л;
- Мука – стакан;
- Масло растительное – 90-100 мл;
- Сахар – 40 г;
- Сода, соль.
Делаем так:
- Мука просеивается в миску поглубже, сюда же засыпается соль, сода(по щепоти), сахар;
- Водичку заливаем медленно, частями, помешиваем все миксером (венчиком, вилкой, блендером). Комочков быть не должно!
- Осталось залить пару-тройку ложек масла растительного;
- Сковородку чугунную старательно нагреваем, делаем огонь средним, жарим выпечку с обеих сторон по паре-тройке минут.
Не лезем в бутылку. Готовим в ней
Вы хотите порадовать домашних вкусняшкой, плюс одновременно помыть посуду. Тогда вам нужно освоить, как сделать тонкие блины на воде в бутылке. Не удивляйтесь, такие тоже есть. Чтобы сделать их, нужны:
- Два яйца;
- 0,5 л.воды;
- 150 г муки;
- Масло растительное — столовая ложка;
- Соль и сода;
- Сахар.
Этот вариант хорош тем, что тесто сохранится около суток. Вам не нужен блендер, венчик, миксер. Ничего не прольется мимо: после выпечки останется меньше мусора: убирать придется минимально.
Готовим так:
- Берем бутылку из пластика полуторалитровую. Хорошо, если будет это бутылка от минералки;
- Вставляем в её горлышко воронку, поочередно отправляем в нее соду, сахар, соль, яйца. Не забываем хорошо взболтать;
- В воронку сыпем муку, вливаем масло, повторно взбалтываем. Сотрясаем так, чтобы ни одного комочка не осталось;
- Необходимое количество смеси выливаем на сковородку (разогрейте заранее). С обеих сторон обжариваем! Начинка подойдет любая, а если желающие будут, молоко добавить можно будет и при следующем приготовлении.
Марокканский вариант, если манку вы не любите
Баргир — толстые блины на воде родом из Марокко. Восходят к берберской кухне, а берберов некоторые считают родственниками русских…И что удивляться наличию блинов в их рационе. Чтобы приготовить баргир, берем:
- Полтора стакана крупы манной;
- Половину стакана муки (лучше пшеничной);
- Половину ложки сухих дрожжей;
- Половину ложки разрыхлителя;
- Яйцо;
- Пару стаканов теплой водички;
- Соль;
- По 50 г сливочного масла и меда.
Чтобы испечь, нужно:
1.Дрожжи разводим в почти кипятке, досыпаем соль с сахаром, мешаем, не ленимся.
- Сюда помещаем манку с разрыхлителем плюс муку. Взбиваем, чтобы получилась однородная масса.
3. Затем следует яйцо.
4.Даем смеси час отдыха. Пускай поднимется: нужна пышная.
5.Осталось перемешать все и испечь, прожарив с обеих сторон.
Вдвойне вкуснее получится, если баргир не жалея смазать маслом сливочным и медом.
Несколько хороших секретов
Такая выпечка — идеальный вариант для всех, кто постится. Это не значит, что блюдо получится невкусным и «постным». Сделайте его вкуснее!
- Муку просеивайте всегда: это поможет сцепиться с другими компонентами;
- Сода в приготовленную смесь из муки,яиц, дрожжей, попадать во время гашения не должна. Гасите над отдельной миской.
- Если пост жесткий, яйцо реально заменить семечками льна,размоченными в кипятке. Подержите минут десять. Льна нужно три ст.л.
- С припеком будет вкуснее. Сделать его реально как на конвертиах с начинкой, так и обжарив начинку. После переверните.
