Кабачок представляет собой не только очень полезный овощ, но также является достаточно универсальным, так как может, готовится в сочетании с совершенно разнообразными продуктами.
На сегодняшний день стало популярно фаршировать это «творение» природы. Главной особенностью является то, что начинка может быть абсолютно любой, как говорится: на ваш вкус и предпочтение.
В качестве фаршировки используется рыба, мясо, грибы, рис, сыр, овощи и пр. Более того такое блюдо будет чрезвычайно вкусным как в горячем, так собственно и холодном виде. Дополнять его и без того изысканный и непревзойденный вкус можно соусом из томатов или сметаной.
Особенности приготовления фаршированных кабачков
Прежде чем приступить к процессу готовки необходимо в первую очередь выбрать «правильные» кабачки. Потому что идеальным вариантом послужат спелые и достаточно крупные экземпляры, не в коем случае нельзя в этих целях использовать перезревшие овощи.
Итак, давайте разбираться с вопросом относительно того как же все-таки правильно готовить это блюдо, чтобы оно понравилось близким людям и гостям?
Прежде чем укладывать начинку, необходимо их почистить, разрезать вдоль или же поперек (как вам нравится) и сделать ямку достаточно глубокую.
Посредством применения ложки нужно предельно аккуратно избавиться от всех семян, а также сердцевины. И только после этого в полученное «пространство» нужно укладывать подготовленную начинку.
Так же сегодня для «ленивых хозяек» существует альтернатива этому блюду. Нужно просто порезать кольцами подготовленные кабачки, сверху на них выложить фарш, после чего посыпать сыром (тертым) и, по желанию, любой зеленью.
Время приготовления
Для того чтобы это блюдо приготовилось и было чрезвычайно вкусным, для него достаточно температурного режима равного 160-180 градусов. Если в качестве начинки использовалась творожная или же овощная основа, то в таком случае запекать необходимо не более двадцати минут.
Однако если применялся фарш сырой для заполнения, тогда временной диапазон приготовления достигает одного часа при температуре не выше ста шестидесяти градусов.
Если начинка «проходила» все этапы термической обработки и блюдо нужно просто немного подрумянить для эстетики и вкуса, то в таком случае достаточно десяти минут непосредственного запекания при температуре 200 градусов.

Для того чтобы приготовить начинку для кабачков вам понадобится:
- 1-2 шт. – кабачков
- 0.5 – 1 кг – мяса или фарша (любого)
- 4-5 шт. – луковиц
- 1 шт. – яйцо
- мука для обжаривания кабачков
- масло растительное
- соль, специи, перец
Этапы приготовления:
- В первую очередь подготовим кабачки: режим кольцами с размером в ширину около пяти сантиметров.
- После этого снимаем кожицу.
- Предельно аккуратно достаем все «внутренности». Но помните о том, что стенки при этом в толщине должны быть равны не менее 0,5 см.
- Сердцевину, которую вы достали не стоит выбрасывать, потому что она нам будет нужна в дальнейшем.
- Фарш: посредством применения мясорубки измельчаем подготовленное мясо или же берем готовый фарш, смотря, что вы используете.
- Мелко измельчаем лук, прибавляем к мясной массе, добавляем на свой вкус перец и соль, яйцо, а также выбранные вами специи.
- Приступаем к процессу фарширования кабачков: очень плотно укладываем в дырочку кабачка фарш.
- После этого подготовленные наши «донышки» обмакнув в муке, на сильном огне в масле растительном обжариваем.
Для приготовления овощной «подушки» вам необходимо:
- Кабачковая мякоть (которая осталась)
- 3-4 шт. – перца болгарского
- 2-3 шт. – лука
- 4-5 шт. – томатов
- 2-3 шт. – морковки
- 0.5 ст. – масла растительного
- перец и соль.
Этапы приготовления:
- Прежде всего, необходимо как можно мельче нашинковать подготовленный лук.
- После его готовки прибавляем морковку, тертую на крупной терке и еще минуты три обжариваем.
- Прибавляем перец, предварительно резанный в виде соломки, и также минуты три обжариваем.
- Далее мелко нарезаем кабачковую мякоть и томаты.
- Прибавляем соль и перец.
- Далее необходимо тушить все овощи двадцать пять минут под крышкой на маленьком огне.
- Берем форму для запекания и аккуратно выкладываем на нее нашу смесь из овощей.
- Сверху выкладываем кабачки предварительно фаршированные, но исключительно обжаренной стороной книзу.
- На поверхность каждого кабачка выдавливаем небольшое количество майонеза и кладем сверху кружочек из помидора.
- Период готовки составляет около одного часа при температурном режиме 180ь градусов.
Способ 2: Запеченные кабачки с фаршем, рисом и сыром в духовке
Для приготовления вам понадобится:
- 2 шт. – кабачков
- 1 шт. – томатов
- 0.500 гр. – фарша свино-говяжьего
- 0.5 ст. – риса (отварного)
- 50 гр. – сыра
- соль и зелень.
Этапы приготовления:
- В первую очередь необходимо отварить рис и хорошенько остудить его.
- В фарш прибавляем мелко нарезанный лук, перец и соль (по вкусу).
- Очищаем наши качки от шкурки, аккуратно разрезаем вдоль и достаем из него всю мякоть.
- Начинка: лук режим как можно мельче, а морковку натираем на терке, лучше всего на средней.
- Приступаем к обжарке наших овощей: сначала готовим лук, а уж потом добавляем к нему и морковку.
- Как только наша морковно-луковая смесь будет готова, к ней добавляем томат, нарезанный и желательно очищенный от шкурки, кабачковую мякоть, рис и фарш.
- В подготовленную и смазанную форму для запекания аккуратно укладываем наши кабачковые заготовки, наполняем их начинкой и сверху заливаем соусом (сметана, смешанная с тертым сыром).
- Период запекания равен тридцати минутам при температуре 180 градусов.
