Рецепт пасты Карбонара с беконом и сливками — традиционное итальянское блюдо, которое уже столько лет радует своим изумительно нежным вкусом не только итальянцев, но и выходцев из других стран. И это не удивительно, ведь вы тоже присоединитесь к числу почитателей этого блюда, как только отведаете ароматную горячую пасту с кусочками подрумяненного бекона, щедро заправленную сливочным соусом.
Ингредиенты для приготовления пасты карбонара с беконом и сливками:
• 300 гр. спагетти (желательно твёрдых сортов пшеницы);
• 4 желтка;
• 100 мл сливок (жирность 35%);
• 100 гр. бекона;
• 50 гр. тертого пармезана;
• 1 зубчик чеснока;
• 2 веточки петрушки (понадобятся только листики);
• соль и черный молотый перец по вкусу.
Приготовление пасты карбонара с беконом и сливками:
- Порежьте бекон некрупными кубиками или тонкой соломкой.
- Очистите и измельчите чесночные дольки.
- Хорошенько промойте, высушите и мелко порежьте листья петрушки.
- Глубокую сковороду поставьте на средний огонь. Обжаривайте ветчину несколько минут, для того чтобы из нее вытопился жир. Следом в сковороду добавьте измельчённые дольки чеснока и перемешайте. Бекон и чеснок обжаривайте примерно 2 минуты, а потом добавьте к ним нарезанную зелень и чёрный перец. Перемешайте все ингредиенты и выключите огонь.
- В глубокой миске смешайте ложкой (но ни в коем случае не взбивайте) яичные желтки, тертый сыр, сливки и соль с перцем.
- В большую кастрюльку наберите воды и поставьте на огонь. Как только вода закипит, посолите и выложите спагетти. Отваривайте их на 1 минуту меньше, чем указано на упаковке. В стакан налейте воду из кастрюли, где варились спагетти, она вам ещё понадобится.
- Варите спагетти так, чтобы они не слиплись, потому что когда будете откидывать их на дуршлаг, спагетти нельзя будет промывать.
- В отдельной посуде смешайте обжаренный бекон со спагетти. Добавьте к ним сливочный соус. Горячая паста расплавит тертый сыр и доведет до готовности желтки. Быстро и тщательно перемешайте эту смесь так, чтобы все спагетти покрывал сливочный соус. Если приготовленной пасте не хватает влаги, и она получается липкой, добавьте в нее немного бульона, оставленного после варки спагетти. Но не добавляйте туда оливковое масло, иначе ваша паста просто станет жирной и еще масло может испортить вкус соуса.
- Подавайте блюдо в горячем виде.
