Картофельное пюре с говяжьей печенью в томатном соусе
Частенько многие не покупают печёнку просто потому, что не знают, как правильно её приготовить, чтобы она была мягкой, нежной и вкусной, но на самом деле готовить её очень просто, а в результате вы получите потрясающее ароматное ресторанное блюдо. Его можно и просто подать к обеду или ужину, и предложить на праздник гостям.
Рецепт дан на 2-х или 3-х человек
Нам понадобится:
- 6 средних картофелин,
- 300г говяжьей печени,
- 40г сливочного масла,
- 1 столовая ложка муки,
- 7 столовых ложек томатной пасты,
- Соль по вкусу,
- 3 столовые ложки сахара,
- 1 головка репчатого лука,
- Растительное масло.
Готовим пюре с говяжьей печенью
- Картошку моем, чистим и нарезаем небольшими кусочками. Ставим вариться в подсоленной воде.
- Чистим головку репчатого лука, разрезаем пополам и нарезаем полукольцами. Складываем лук на сковороду и обжариваем до золотистого цвета в растительном масле. Снимаем с огня.
- Далее займёмся говяжьей печенью. В идеале лучше сразу купить чистый кусочек, без плёнок, но если они есть — их надо удалить.
- Нарезаем печень небольшими кусочками, складываем к жареному луку.
- Добавляем в сковороду примерно полстакана воды и 7 столовых ложек томатной пасты, чуть присаливаем (где-то четверть чайной ложки соли или чуть меньше), кладём 3 столовые ложки сахара. Томатная паста всегда любит сахар, с ним она становится вкуснее, поэтому не бойтесь добавлять ложки с горкой.
- Размешиваем соус – он должен обволакивать всю печёнку и она должна в нём утонуть. На небольшом огне под крышкой тушим минут 15.
- Смотрим как дела у нашей картошки. Если она сварилась, то сливаем почти всю воду, оставив лишь сантиметр или два на дне (небольшое количество воды помогает пюре легче растолочь).
- Добавляем в картошку 40г сливочного масла и толчём её толкушкой до состояния пюре. Почему масло добавляем на этом этапе? Так проще растолочь картошку и она легче смешается с маслом, этим способом пользуются повара в профессиональных ресторанах, так как это ускоряет приготовление блюда. Пробуем пюре на соль, и если вам мало соли его можно чуть присолить, но не переборщите.
- За это время должен успеть приготовиться соус. Всыпаем в него столовую ложку муки, хорошенько его после этого перемешиваем и оставляем под крышкой готовиться ещё на 5 минут. За то время можно успеть сделать чай и украсить наши тарелки.
- Выкладываем пюре на тарелки, оставив место для печени с соусом. Можно присыпать пюре свежерубленной зеленью, например, укропом, петрушкой или зелёным луком. К данному блюду также неплохо подходят маринованные огурчики.
- Пять минут прошли и соус готов, ещё раз перемешиваем его и выкладываем на тарелку, рядом с пюре. Всё, можно подавать.
Печень получается невероятно нежной. Блюдо очень ароматное, мягкое и невероятно вкусное. Подходит для всей семьи – и детям и взрослым, и пожилым людям.
